A fresh and local meat business is set to open in Conway during the month of November. Jackson’s Meat Market, located on Prince Street, 2670 Prince St. is opening its doors on Nov. 18.
Mark Johnson, owner of Jackson’s Meat Market, has a variety of meats in store for customers to buy and enjoy.
“We’ll have fresh seafood, chicken, beef, pork as fresh as we can get it,” Jackson said. “We are partnering with local people to put in their beef, chicken and pork. Rabbit Ridge farms is one of the places we’ll be using. Ozark beef is another one that we will be using. We’ll source fresh seafood.”
Fresh cut deli meat will also be sold at Jackson’s Meat Market.
“We’ll have deli, higher end deli stuff. We’re going to be making some of our own deli products, like pastrami and corned beef and bacon and things like that,” Jackson said. “We have a butcher on staff that will cut it the way you want. We will be cooking, so we will be smoking some meat. You can come in, grab a rack of ribs and a couple sides and head out the door and go eat it.”
With the holidays nearing Jackson said that the Market will be offering different meal options just in time for Thanksgiving and Christmas.
Jackson hopes to bring the old school butcher feel back to Conway, “Where people can come in, pick out what they want, get it cut the way they want it, then take it home.”
Jackson expressed he felt this business was a now or never chance to do what he loved.
“I decided it’s time to go and do my own thing. I love to cook, I love to be around it,” Jackson said. “I love meat, I love barbuding. It’s my chance to do it.”
The community has been supportive and excited for the business to open.
“It’s been really fun, everybody I’ve had come in and working on it all keeps bugging me asking ‘When are you opening?’,” Jackson said. “When I first started the Facebook page I did a food blog and for about a year and half, I had 200 followers. Within a month and half of this I’ve jumped, almost 700 people.”
Jackson wants future customers and the community to know that when they come to Jackson’s Meat Market they will get just what they want.
“If they want a two inch cut rib, chop a ribeye, that’s what they’re going to get. We’re going to make it fun, we’re going to be customizable,” Jackson said. “We’re just trying to make it as community friendly as possible.”
Jackson’s Meat Market will be closed on Monday and Sunday but Tuesday through Friday they will be open from 10 a.m. to 6 p.m. On Saturdays they will be open from 9 a.m. to 2 p.m.
